Another mobile vendor has joined the local street food coalition.?

Sophie Epstein has turned a 1978 Volkswagen van into Le Bubble Bus, where she will sell bubble tea.?

According to Le Bubble Bus' Facebook page, bubble tea originated in Taiwan. It's a cold beverage that is made up of sweetened tea with milk flavorings. It's typically served over tapioca pearls, and a large straw is used to eat the "bubble pearls" at the bottom of the drink.?

Co-owner of Taco Sherpa Lindsay Nash said via email that Epstein is the latest member of Chattanooga's street food coalition, called Chattanooga Street Food Project.?

There are four food trucks in Chattanooga?Famous Nater?s,?Southern Burger Company,?A Taste of Argentina?and?Taco Sherpa.

This time last year, there were only two.

And other street food vendors, such as?Monkey Town Donut Company?and? The Chattanooga Cookie Company, have also joined in the movement.

Pure Sodaworks, which makes?small batches of natural sodas with organic herbs, spices and produce, also frequents events with the food trucks and other mobile vendors, although they also have a storefront in Coolidge Park.?

Epstein said in an email that bubble tea is especially popular around college campuses and in large cities like Los Angeles and New York City.
